Make Your Own Mayo

Want a recipe to help use up some of those fresh eggs? Make your own Mayo!


Ingredients:

  • 2 large eggs

  • 2 tablespoon plus 2teaspoon distilled white vinegar

  • 4 teaspoons apple cider vinegar

  • 1 1/2 teaspoon table salt

  • 1 teaspoon sweet paprika (not spicy)

  • 2 1/4 cup vegetable oil or I used sunflower oil


place all ingredients except oil in a tall container (I used a quart sized Ball mason jar with a screw on plastic lid)

Add oil slowly and let settle for about 30 seconds are so




using an immersion blender at the BOTTOM of the jar start blending, be patient it takes a minute to start feeling the texture get very thick but Once it does lift the blender slowly in the jar until it all begins to thicken. Once at the desired consistency—-your done! Told you it was easy! Taste test to make sure it’s where you want it to be refrigerate and use in place of store bought Mayo!
